The grass is always greener, etc, etc...

Real easy for an agency to tell you what they will do when they don't have to back it up. Pretty rare for a company to tell a new hire that they won't help them with scheduling for school, family, and the like.

Perhaps you could try one while working part time for the other to get a better feel for the situation before you jump ship.

Thats why you need to hold them to it.

Actual situation (lots of BS over a call and paperwork.)

Training Coordinator: I'm going to need you to come in on Wednesday for remedial paperwork training [Honestly, I have some of the best paperwork at the company].

Me: I've got school, sorry. I can bring in a schedule if you don't believe.

TC: Well, Mr. [last name]. You've got a job now, and you need to make a decision.

Me: I've got school, sorry.

[few minutes later]

TC: So, I'll see you here on Wednesday.

Me: Nope, Sorry, I've got school.

TC: Hmm, I'll put you out with an FTO on Saturday [saturday was my next shift].

Company sucks, but hey, they do work around my schedule...

I tend to value being happy and feeling safe at your job over money (presuming, of course, that you can pay your rent and eat).

Partners are just a matter of luck. You might find that you like your partner at the smaller company as much as you liked the one at the bigger company.
